Let’s start this post with a quick story… It all starts with me going on a week long family trip and returning home to an empty fridge and one hungry six year old. After a long drive we had zero energy to get to the store. I searched the pantry and came up with a few overripe bananas, Bobs Red Mill Rolled Oats, and one cup of applesauce. I presented two options to my picky eater…

1. Banana baked oatmeal.
2. Banana Oat Muffins.

After carefully deliberating he finally settled for the second option with the addition of two scrambled eggs and an apple. I was a little excited since this recipe has actually been on my must-make list for a while now. I love the idea of mixing in rolled oats to a muffin. Not only does it provide a great texture but it leaves you feeling just a little more full and satisfied.

The good thing about this recipe is how versatile it is. I added walnuts but if you are looking for something a little sweeter try substituting coconut flakes or even chocolate chips. Another quick swap would be oil for the applesauce. Just use whichever you happen to have on hand and they will be sure to turn out amazing. Toss all of the leftovers into the freezer and pull them out on those busy weekday mornings when you are rushing out the door. All you need to do is pull one out and pop it into the microwave for 30 seconds.
