As we are in the thick of apple season, there’s really no better time to take advantage of the seasonal bounty and make an easy and healthy snack with them. These Healthy Apple Crumble Bars are the perfect solution to your abundance of apples.

I absolutely love apple season. Not only are apples one of the few pieces of fruit that I truly enjoy, but they are the mark of my favorite season of the year. Autumn.

The fresh crispness of the air, especially in the mornings. The cozy sweaters, leggings, and boots that make up my autumn wardrobe. The scents of cinnamon, pumpkin, coffee, and apple pies. Everything just seems to smell and taste better. Even my beer tastes better because it’s football season.

So you better believe it, as soon as apples started showing up in an abundance at my farmer’s market, I was all over them, and I haven’t stopped yet. Apple pie, apple muffins, apple bread… I just can’t stop!

So of course when I was planning after-school snacks for my kiddo, my thoughts instantly went to apples.

But wait just a second – can we talk about after school snacking? Does anyone else’s kid come home from school acting like they haven’t eaten in years? And then proceed to eat everything in the house until dinner time? Dang! I don’t know if my kid is going through a growth spurt or what, but he wants to eat all.the.things!

So that’s another reason I decided to make these bars for snacking. They’re hearty and filling. Plus they taste like apple pie, so no kid is going to think they’re eating something healthy. But you’ll know that what you’ve served up is full of fresh fruit and whole grains. Total win in mom’s book!

Healthy Apple Crumble Bars

ALSO… these bars are totally healthy enough to do double duty for breakfast. Pair them with a couple eggs in the morning for protein, and you are set! Again, apple pie for breakfast – your kids will be LOVING you!

Just slice them up into bars, wrap them individually or store in a container, place in the fridge, and they’ll be ready to grab and go at a moments notice.
